Read up on xvid 2 pass encoding. Also, a codec I found that is great for fast motion first-person AVIs is the Divx hi-motion codec. However, this codec is a hack of something and meant to be illegal, but you can acquire it from various places. I'm not sure why it's illegal, but it gives great results.

if you don't like divx then use xvid, it's better anyway imo.
