I've just picked up TFC again and played my first gather match a couple of nights ago. It was pretty overwhelming (I played defence for a couple of minutes, not knowing we were playing O v D). I'm working on distance concing and bunny hops right now, is there anything else I should be trying out or classes I should learn to start?

I would just pick one class for now and try getting efficient with that particular class whether it be offense or defense. pick your strongest class and work on it, and of course the basics like bhop etc. practice against people who are 10x better than you and you will get better fast.

i would recommend you start trying to get good at soldier, once your decent at soldier then all the other classes come easier

work on communication too. if you don't have a mic, get one and practice communicating to your teammates if the enemy gets past you, you are about to die, and where the flag is.
Soldier and medic are probably the best starter classes, and they are core classes in the game. You're hardly ever going to see a team not run at least one of both classes in a match.

Once you learn to play one class relatively well, you'll be surprised at how easily most others will fall into place. I'd say demo is the one class where other skill s don't carry over as well.

sniper is the easiest. You just put the little dot on the thing you want to die.

like sutter said comms are key, but soldier is hard to get good at, like anything - it takes time and practice. playing against upper level players you will get frustrated, but it will tell you what you're doing wrong if you pay attention. I'd recommend playing in bronze or playing in some pubs until you get the feel for the game again. :p good luck and welcome back
