I have over 100GB of music, and iTunes is excellent for sorting music. It automatically sorts them into folders.

I have a little over 100 gigs myself and Winamp is TERRIBLE at handling it. Stay away from Winamp when you have over 10k songs... super fast computer and Winamp crashes 50% of the time and loses all my song ratings (and that really pisses me off).

iTunes is a better program, but I can't install it on my machine for some reason (requires quicktime, which is already installed... but everytime I try to install iTunes it tries to install quicktime as well and just crashes :().

christ, how can you listen to 100 gigs of music? have you really heard all of the songs you have?

Listened to easily 2/3 of it, but it's hard to really know because when Winamp crashes it loses count of all the songs I listened to that session.

About 12k songs, a little over 1100 albums from almost 670 artists. I listen to 5-10 albums a day at work so I can get through my entire collection in a few months... and yes, I needs it. At home I mostly listen to music while gaming, so I just load every song I have and put in on random. When it randomly loads an artist I want to listen to I turn random off and listen through the entire album (or at least a few select songs) and then go back to random til it plays an album I want to hear. Winamp controls on your keyboard = awesome.

winamp sucks.

i just organize mine into folders.

My Music/Albums(name of the folder)/Artists/Album (year)
My Music/Soundtracks/Movie/whatever
etc.

the albums folder is the only substantial one.

iTunes is good for organizing your music in folders by Artist/Album. Once you get it initially sorted, you can make changes to get it by Genre or Year or whatever, and just keep track of it manually from there. I use foobar normally to just listen, if you don't mind taking the time to get it set up it's the best player out there. Like others here I've found winamp is awful with large libraries and I haven't really been impressed with how iTunes handles them either.

If you're like me and you flac/tak your files for backup, the size of your collection can easily go up and make it seem like you are in OMG status.
You can easily move your files around and create sub-directories with foobar with the File Operations dialog. Use itunes if you like throwing your resources away.
